What each ingredient does

Beef
Forms the tender outer wrap that holds the sausage filling during long cooking.
Sausage meat
Adds fat and savory flavor that keeps the filling moist as it cooks.
Butter
Browns the rolls in the skillet, adding color and a rich, nutty flavor.
Brown stock
Forms the cooking liquid that becomes the gravy and gives the sauce its body.
Onions
Release sweetness and savory depth into the braising liquid as they cook.
Lemon juice
Adds acidity that brightens the gravy and balances the richness of the meat and sausage.

The step that matters

Browning the rolls in butter. Browning creates flavorful crust through the Maillard reaction. Rolls must be dried and browned in a hot pan, not crowded, or they will steam instead of browning.
