Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cabbage
Forms the bulk of the dish and turns tender and mild as it simmers slowly.
Spareribs
Supply the main meat, which becomes tender through long, slow simmering in the liquid.
Potatoes
Add starch that soaks up cooking liquid, giving a soft, filling texture.

The step that matters

Boil slowly, do not rush. A gentle simmer lets tough connective tissue in the ribs break down into tender meat. A hard, fast boil can toughen the meat and break up the cabbage, so keep the liquid at a slow, steady simmer under a lid.

Swap the potato

How well each one fits the dish's main ingredients (cabbage, pepper):

  1. Cauliflowerfits better
  2. Broccolifits better
  3. Turnipfits better
  4. Potatothe original

Fit is the average pairing score against cabbage, pepper. Candidates are from the same food group and used in at least 100 recipes.
