Smothered Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Dress the chicken and split it down the back.

  2. Cut off the neck and the first joints of the legs and wings.

  3. Place these parts with the giblets in the bottom of a roasting pan.

  4. Sprinkle with salt.

  5. Lay the chicken flat in the pan, breast side up.

  6. Rub the breast with butter, sprinkle with flour, and dust with pepper and salt.

Bake and serve

  1. Add ½ cup water to the pan, cover tightly, and bake at 350°F (175°C) for about 1 hour or until done.

  2. If the chicken does not brown, remove the lid near the end of cooking to allow it to brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein; the long covered bake makes the meat tender and cooked through.
Butter
Adds fat and richness and helps the breast skin brown in the oven.
Flour
Dusted on the breast, it helps the surface brown and gives the coating body.
Water
Creates steam in the covered pan, keeping the chicken moist during the first part of baking.

The step that matters

Removing the lid near the end. Covering the pan traps steam, which keeps the chicken moist but prevents browning. Uncovering late lets dry heat brown the surface without overcooking the meat.
