Partridges a LA Francaise

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Truss and skewer the partridges.

  2. Lay a slice of lemon and a slice of fat bacon over each breast.

  3. Wrap the partridges in paper and tie tightly.

  4. Roast in a 400°F (200°C) oven for 1 hour.

  5. Remove the paper and serve cold with a sauce of orange juice.
