Cream of Chicken Sandwiches

Ingredients

Directions

Make the chicken cream

  1. Chop the white meat of the chicken finely and pound it to a paste.

  2. Dissolve 1 teaspoon gelatin in 2 tablespoons cold water over low heat.

  3. Stir the dissolved gelatin into the chicken with 1 teaspoon grated horseradish and ¼ teaspoon salt.

  4. Mix until it begins to thicken, then fold in ½ pint of whipped heavy cream and refrigerate until very cold.

Assemble and garnish

  1. Cut the bread slices thicker than usual for fancy sandwiches, butter them, and spread with the chicken cream mixture.

  2. Trim off the crusts and cut into desired shapes without covering with bread.

  3. Garnish the tops with sliced olives, capers, or tips of celery.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

White meat of chicken
Forms the main body of the filling, providing savory flavor and a smooth paste-like texture.
Gelatin
Sets the chicken mixture so it holds its shape when chilled and cut.
Heavy cream
Adds richness and a light, airy texture when whipped and folded in.

The step that matters

Fold in the whipped cream after the mixture only begins to thicken. Gelatin sets as it cools, so if the chicken mixture is too stiff or too warm, the whipped cream will deflate and fold in unevenly. Stopping at the early thickening point keeps the filling light and spreadable once chilled.

Swap the horseradish
