Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Cornstarch
- Thickens the milk into a smooth, sliceable pudding as it heats.
- Egg yolks
- Enrich the pudding and add richness and body as it sets.
- Milk
- Forms the liquid base that the cornstarch thickens.
- Sugar
- Sweetens the pudding and balances the flavor.
The step that matters
Adding the cornstarch mixture. Cornstarch must be mixed with cold or reserved liquid first so it does not clump, then added while the milk is hot so its starch granules swell and thicken the pudding evenly.
“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
