Farina Pudding

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the base

  1. Bring the milk to a boil in a saucepan.

  2. Gradually stir in the farina and boil for 10 minutes, stirring constantly.

  3. Remove from heat and add the powdered sugar, vanilla, currants, and egg yolks; mix thoroughly.

  4. Gently fold in the beaten egg whites.

Bake and serve

  1. Grease a mold with butter and pour the mixture into it.

  2. Place the mold in a baking dish filled with hot water and bake at 400°F (200°C) for 30 minutes or until set.

  3. Turn out onto a serving dish and serve hot with Sabayon sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Farina
Thickens the milk into a stiff base that holds the pudding's shape when set.
Egg whites
Whipped and folded in, they lighten the mixture and help it rise and set in the oven.
Egg yolks
Enrich the pudding and help it set into a tender, custard-like texture.
Milk
Hydrates the farina and forms the liquid base that gelatinizes into the pudding.
Powdered sugar
Sweetens the pudding and dissolves evenly into the warm base.

The step that matters

Gently fold in the beaten egg whites. Overmixing deflates the whipped egg whites, losing the air that lightens and lifts the pudding during baking.

Swap the currant

How well each one fits the dish's main ingredients (milk, sugar, vanilla, egg, butter):

  1. Figfits better
  2. Peachfits better
  3. Coconutfits better
  4. Currantthe original

Fit is the average pairing score against milk, sugar, vanilla, egg, butter. Candidates are from the same food group and used in at least 100 recipes.
