Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Dough for apple dumplings
Forms the wrapper that holds the filling together during boiling.
Good, sweet oranges
Supply the fruit filling and its juice, which moistens the rolled dough as it cooks.
White sugar
Adds sweetness and helps draw out and balance the orange flavour.
Grated yellow peel
Adds concentrated citrus aroma to the filling.

The step that matters

Sealing the roll with cold water. If the edges are not pressed firmly closed, the juice escapes during boiling and the filling can become waterlogged or the dough can open. Cold water helps the edges bond without making the dough sticky or tough.

Swap the orange

How well each one fits the dish's main ingredients (apple, sugar, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Pearfits better
  4. Orangethe original

Fit is the average pairing score against apple, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
