Why it works: Sugar and syrup match in chemistry and in kitchens. They rank in the top 6% of all ingredient pairs, and cooks put them together in 5,842 recipes. Both carry ethanol, which smells alcoholic, ethereal. The science ↓

Pear Compote

Ingredients

Directions

  1. Pare, halve, and core the pears.

  2. Boil the pears in a syrup made of sugar and water until clear.

  3. Remove the pears and boil down the syrup until it thickens to a jelly consistency.

  4. Optionally, add a few peelings to the syrup for color, then remove them.

  5. Pour the syrup over the pears and serve cold.

  6. Serve with plain or whipped cream if desired.
