Snow Eggs

Ingredients

Directions

  1. In a bowl, add a pinch of salt to the egg whites and whip to a very stiff froth.

  2. Gradually add the powdered sugar and a few drops of flavoring while whipping.

  3. Scald the milk in a large pan over medium heat.

  4. Shape the whipped egg whites using a tablespoon and drop them into the hot milk a few at a time.

  5. Turn the egg whites until they are cooked, then lift them out with a skimmer and place them on a glass dish.

  6. To make the custard, combine the yolks, hot milk, and sugar in a bowl and mix well.

  7. Pour the custard around the cooked egg whites on the dish.
