Blackberry Griddle Cakes

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Make a dough that is not as rich as pie dough.

  2. Roll out the dough into a large sheet.

  3. Cover one half thickly with blackberries.

  4. Fold the other half of the dough over the blackberries and press the edges tightly.

  5. Bake on a griddle over the grate or in the oven at 400°F (200°C) until done.

  6. Remove from heat, turn back the top crust, and spread the berries over the whole sheet.

  7. Sprinkle with sugar and bits of butter.

  8. Cut into squares and serve on separate plates.
