Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat your oven to 300°F (150°C).

  2. Line a baking pan with thick greased paper.

Make the batter

  1. In a mixing bowl, combine the egg whites and salt, and beat them lightly.

  2. Add the cream of tartar and beat thoroughly until well combined.

  3. Sift in the sugar, using a scant measure, and then sift in the flour, mixing gently until smooth.

Bake

  1. Pour the batter into the prepared pan and bake for 55 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Whipped into foam that traps air, giving the cake its light, airy structure.
Cream of tartar
Stabilises the whipped egg whites, helping the foam hold its volume and stay glossy.
Granulated sugar
Sweetens the cake and strengthens the foam, helping it stay stable while baking.
Flour
Provides the gentle structure that sets the airy foam into a sliceable crumb.

The step that matters

Mixing in the sugar and flour. Folding gently keeps the air in the whipped egg whites. Stirring or deflating the foam makes the cake dense and squat instead of light and tall.
