Why it works: Almond and vanilla match in chemistry and in kitchens. They rank in the top 4% of all ingredient pairs, and cooks put them together in 3,961 recipes. Both carry eucalyptol, which smells eucalyptus, herbal. The science ↓

Ingredients

Directions

The book says “a cool oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the mixture

  1. Beat the egg whites until stiff.

  2. Gradually beat in the confectioner's sugar and vanilla flavoring.

  3. Add half of the mixture to the chopped almonds.

Shape and bake

  1. Roll out the almond mixture into a sheet 3 inches wide.

  2. Spread the icing over the sheet and cut into sticks.

  3. Bake in a cool oven at 300°F (150°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chopped almonds
Provide the main bulk, nutty flavor and chewy texture of the sticks.
Whites of 4 eggs
Whipped to stiff foam, they give the mixture lightness and help it hold its shape.
Confectioner's sugar
Adds sweetness and, with the whites, forms a thick icing that binds the almonds.

The step that matters

Beat the egg whites until stiff. Whites beaten only partway will not hold a stable foam, so the mixture becomes dense and the sticks lose their light, tender texture.

Swap the almond

How well each one fits the dish's main ingredients (sugar, egg, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits less well
  4. Macadamia nutfits less well

Fit is the average pairing score against sugar, egg, vanilla. Candidates are from the same food group and used in at least 100 recipes.
