Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add the milk, baking powder, and vanilla, mixing well.

  4. Gradually add flour to create a thin batter.

  5. In a separate bowl, beat the egg whites until very stiff.

  6. Gently fold the beaten egg whites into the batter.

Bake and serve

  1. Pour the batter into cake pans and bake until golden.

  2. Cool and layer with boiled icing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg whites
Beaten until stiff, they trap air that lifts the cake and makes it light.
Butter
Creamed with sugar, it adds richness and a tender crumb.
Sugar
Creamed with butter, it sweetens and helps give the cake a fine texture.
Flour
Forms the structure of the cake once it sets in the oven.
Baking powder
Releases gas in the batter, helping the cake rise.

The step that matters

Folding in the beaten egg whites. Beaten egg whites hold air that gives the cake its lift. Stirring them in vigorously knocks out air, so fold gently until just combined.

Swap the vanilla

How well each one fits the dish's main ingredients (sugar, butter, milk, egg, flour):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against sugar, butter, milk, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
