Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Almonds
Provide the main body and nutty flavour of the filling once pulverized.
Thick sour cream
Adds moisture and tang, and helps make the filling smooth and spreadable.
Egg yolks
Enrich the custard and add richness and structure as they combine with the cream.
Egg whites
Whipped to stiff peaks, they lighten the filling and give it airy structure.

The step that matters

Folding in the egg whites. Whipped whites lose air if stirred or overmixed. Folding gently keeps the filling light, so it reaches the thick, sponge-batter consistency the recipe calls for.

Swap the almond

How well each one fits the dish's main ingredients (cream, egg, sugar, vanilla):

  1. Almondthe original
  2. Chestnutfits about as well
  3. Hazelnutfits about as well
  4. Macadamia nutfits less well

Fit is the average pairing score against cream, egg, sugar, vanilla. Candidates are from the same food group and used in at least 100 recipes.
