What each ingredient does

Egg yolks
Thicken the sugar syrup into a rich custard and add richness and smoothness to the frozen texture.
Heavy cream
Adds fat and richness, giving the frozen pudding a smooth, creamy texture.
Chestnuts
Contribute body and a starchy, mealy texture to the pudding.
Sugar
Sweetens the base and helps keep the frozen mixture soft rather than rock-hard.

The step that matters

Stirring in the beaten egg yolks. Egg yolks can scramble if added to hot syrup too quickly. Stir steadily as the mixture comes back to a boil so it thickens smoothly into a custard rather than curdling.
