What each ingredient does

Granulated sugar
Provides sweetness and bulk, and helps form the fudge's soft crystalline structure as it cools.
Confectioner's sugar
Adds sweetness and fine crystals that contribute to a smoother, creamier texture.
Sweet milk
Supplies liquid and milk solids that give the fudge its creamy body and mouthfeel.
Cocoa or grated chocolate
Provides the chocolate flavor and color, and adds fat and solids that firm the fudge.
Butter
Adds fat for a rich mouthfeel and helps keep the fudge tender and smooth.

The step that matters

Beating until it thickens. Beating the hot mixture as it cools encourages fine sugar crystals to form, giving a smooth, creamy texture. Beating too late, after it has set, can leave the fudge grainy or hard to work with.

Swap the nuts

The recipe marks nuts as optional. How well each one fits the dish's main ingredients (sugar, milk, butter, walnut, cocoa):

  1. Almondfits better
  2. Pecansfits about as well
  3. Pistachiofits about as well
  4. Nutsthe original

Fit is the average pairing score against sugar, milk, butter, walnut, cocoa. Candidates are from the same food group and used in at least 100 recipes.
