Tutti-frutti Candy

Ingredients

Directions

Make the layers

  1. In separate pans, melt a large piece of white fondant and maple syrup.

  2. Mix English walnut meats with the maple mixture and pour into the bottom of a mold.

  3. Once cooled, take half of the white fondant, color it pink, and flavor with rose or cherry and chopped candied cherries; pour over the first layer.

  4. Flavor the remaining white fondant with vanilla, add nuts and chopped candied pineapple, and pour on top.

Set and serve

  1. Cover the mold with oiled paper and let it stand overnight.

  2. Remove from the mold, place on a fancy plate, and surround with glace nuts.

What each ingredient does

White fondant
Forms the sweet, firm candy base that sets into each layer.
Maple syrup
Adds sweetness and moisture, helping the mixture stay soft and bind with the fondant.
English walnut meats
Add crunch and a nutty texture against the soft fondant layers.
Candied cherries
Add chewy sweetness and colour to the pink layer.
Candied pineapple
Adds chewy, sweet fruit pieces to the top layer.

The step that matters

Let the layers cool before pouring the next one. Pouring hot fondant onto a layer that has not cooled can melt it and blend the layers together, blurring the distinct colours and textures.

Swap the pineapple
