Quince Jelly

Ingredients

Directions

The book gives no cooking times; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

  1. Wipe the quinces, cut out any spots, quarter them, and remove the cores.

  2. Cut the quinces into smaller pieces.

  3. Place the pieces in a preserving kettle and cover with cold water.

  4. Boil for 15 minutes to test the jelly.

  5. If apples are plentiful, you can substitute some apples for quinces.
