Dried Corn

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Husk and silk the corn carefully.

  2. Cut the grains from the cob with a sharp knife, scraping with the back of the knife.

  3. Place the corn in a baking pan and cook in a 300°F (150°C) oven, stirring occasionally until the milk dries up.

  4. Scatter the corn on a stretcher made by tacking thin muslin to a frame.

  5. Put the stretcher outdoors in the sun to dry.

  6. Once dried, place the corn in thin muslin bags and tie them up in heavy paper bags.

  7. Hang the bags in the attic.
