Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the meat and flavourful stock base as it cooks slowly in liquid.
Young okra
Releases natural thickening starch into the liquid, giving the gumbo body.
Oysters
Add briny, savoury flavour and tender texture when cooked briefly at the end.
Onion
Adds aromatic sweetness and depth to the broth as it bakes with the chicken.

The step that matters

Adding the oysters and cooking for 5 minutes. Oysters toughen and turn rubbery when overcooked. Adding them last, covered, for a short time lets them just cook through while staying plump and tender.

Swap the okra

How well each one fits the dish's main ingredients (chicken, onion, pepper, oyster):

  1. Potatofits better
  2. Capsicumfits better
  3. Tomatofits about as well
  4. Okrathe original

Fit is the average pairing score against chicken, onion, pepper, oyster. Candidates are from the same food group and used in at least 100 recipes.
