Why it works: Beef and onion are a kitchen classic. They rank in the top 7% of all ingredient pairs, and cooks put them together in 17,092 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓
Roast Beef
Ingredients
Directions
The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.
Prepare
Preheat the oven to 400°F (200°C).
Place the roast in a pan and sprinkle salt, pepper, and grated onion in the bottom.
Spread fresh lard over the roast and dredge with flour.
Roast
Roast in the hot oven for about 10 minutes before turning.
Sear the other side, then add ½ cup of water to the pan.
Baste with the gravy from time to time until the roast is done.
If desired, add dressing about 30 minutes before removing from the oven.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Beef roast
- Forms the main body of the dish and is the protein that cooks through in the oven.
- Fresh lard
- Adds fat that helps the outside brown and keeps the surface from drying out.
- Flour
- Coats the surface, helping it brown and thicken the pan juices into gravy.
The step that matters
Basting with the gravy. Spooning pan juices over the roast keeps the surface moist and encourages browning. Cooking it through slowly and checking doneness matters, since overcooking dries the meat.
