Date Pudding

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, combine the dates, nuts, flour, baking powder, and salt.

  3. In another bowl, beat the egg whites until stiff peaks form.

  4. In a separate bowl, beat the egg yolks with the sugar until light and fluffy.

Make and bake the pudding

  1. Fold the egg yolk mixture into the date mixture, then gently fold in the egg whites.

  2. Pour the batter into a greased baking dish and bake slowly until set.

Serve

  1. Serve warm with whipped cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites trap air for lift, while yolks add richness and help bind the batter.
Dates
Provide natural sweetness and a soft, moist body to the pudding.
Baking powder
Releases gas during baking, helping the pudding rise and become light.
Sugar
Sweetens the batter and helps create a light, fluffy yolk mixture.
All-purpose flour
Provides structure so the batter holds together once set.
Chopped nuts
Add texture and a toasty, rich flavor to the pudding.

The step that matters

Folding the egg whites in gently. Beaten egg whites hold air that gives the pudding its lift. Stirring vigorously or overmixing deflates the foam, leaving a dense, flat result.

Swap the nuts

How well each one fits the dish's main ingredients (dates, flour, egg, sugar):

  1. Almondfits better
  2. Chestnutfits better
  3. Mixed nutsfits better
  4. Nutsthe original

Fit is the average pairing score against dates, flour, egg, sugar. Candidates are from the same food group and used in at least 100 recipes.
