What each ingredient does

Knox's gelatine
Sets the liquid into a firm, sliceable structure as it cools.
Oranges
Add fresh citrus flavour and acidity, and pieces of fruit for texture.
Pineapple
Adds sweet tropical flavour and fruit pieces to the set gelatin.
Bananas
Add soft texture and mild sweetness to the fruit mixture.

The step that matters

Pour the fruit into cooled gelatin. If the gelatin is still warm, it can not set properly and the fruit may float or sink unevenly. Waiting until it is cool but still liquid lets the fruit distribute and the gelatin set firmly.

Swap the orange

How well each one fits the dish's main ingredients (pineapple, banana, sugar):

  1. Vanillafits better
  2. Strawberryfits better
  3. Pearfits better
  4. Orangethe original

Fit is the average pairing score against pineapple, banana, sugar. Candidates are from the same food group and used in at least 100 recipes.
