What each ingredient does

Sugar
Forms the syrup that sweetens the cherries and thickens as it cooks.
Large cherries
Provide the main fruit, with flavor and chewy texture after drying in syrup.

The step that matters

Pour the syrup without stirring. Stirring a hot sugar syrup as it thickens can trigger crystallization, leaving grainy sugar instead of a smooth, clear syrup around the cherries.
