Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Pour boiling water over the raisins and let them stand for 10 minutes, then drain and cut in halves.

  3. Save 1 cup of flour to mix with the raisins.

Make the batter

  1. Dissolve the baking soda in a little hot water and add it to the sour milk, stirring well.

  2. Add the brown sugar and salt, then gradually mix in the bran flour and whole wheat flour.

  3. Beat the mixture thoroughly until well combined.

  4. Fold in the raisins mixed with the reserved flour.

Bake

  1. Pour the batter into a greased 5x9-inch loaf pan.

  2. Bake for 1 hour until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour milk
Provides moisture and acidity that reacts with the baking soda to help the loaf rise.
Baking soda
Reacts with the acid in the sour milk to produce gas that lifts the loaf.
Bran flour
Gives the loaf its structure and a dense, hearty texture.
Whole wheat flour
Adds structure and a nutty, earthy flavour with a denser crumb.
Brown sugar
Adds sweetness, moisture and helps the crust turn golden brown.
Raisins
Add sweetness and chewy, moist pockets throughout the loaf.

The step that matters

Dissolve the baking soda in hot water and stir it well into the sour milk. Baking soda needs an acid to activate it. If it is not fully dissolved and evenly distributed through the sour milk, it creates gas unevenly, leaving pockets of dense batter and an uneven rise.

Swap the raisin

How well each one fits the dish's main ingredients (milk, sugar, flour, wheat):

  1. Vanillafits about as well
  2. Raisinthe original
  3. Figfits less well
  4. Blueberryfits less well

Fit is the average pairing score against milk, sugar, flour, wheat. Candidates are from the same food group and used in at least 100 recipes.
