Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the dough

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, mix flour, melted lard, and grated cheese with a fork.

  3. Add cold water gradually until the dough clings together.

  4. Roll out the dough for pie crust and cut into rounds with a large biscuit cutter.

Fill and seal

  1. In each round, place 1 tablespoon of a mixture of grated cheese, beaten egg yolk, salt, and paprika.

  2. Moisten the edges, cover with another round, and press together with a fork.

Bake

  1. Bake for 15 minutes until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the pastry dough.
Lard
Adds fat that makes the pastry tender and flaky.
Grated cheese
Adds rich flavor and melts into the filling.
Egg yolk
Adds richness and helps the filling bind and brown.

The step that matters

Sealing the rounds. If the edges are not moistened before covering, they will not stick together, and the filling may leak out during baking. Pressing with a fork also helps create a firm seal.
