Roast Chicken and Dressing

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Clean and wash the chicken thoroughly.

  2. Cook giblets in water until tender, about 2 hours.

  3. Crumble the bread very fine and mix with giblets, chopped onion, salt, pepper, and poultry seasoning.

  4. Add hot giblet water to the mixture and fill the chicken.

Roast

  1. Sew up the chicken and rub salt on the outside.

  2. Roast the chicken in a preheated oven at 350°F (175°C) for 2 hours.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Forms the main body of the dish, and its fat and juices keep the meat moist as it roasts.
Stale bread
Soaks up the hot giblet water and holds the dressing together while it cooks.
Giblets
Add rich, savory flavor to the dressing through the meat and the cooking water.
Onions
Add aromatic sweetness and moisture to the dressing as they cook.

The step that matters

Fill the chicken with dressing. Packed dressing insulates the cavity and can slow heat reaching the thigh, so the bird may cook unevenly. Loose filling and a fully cooked centre matter for safe, even roasting.

Swap the onion

How well each one fits the dish's main ingredients (chicken, bread, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Potatofits about as well
  4. Onionthe original

Fit is the average pairing score against chicken, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
