To Roast Beef

Ingredients

Directions

Prepare the beef

  1. Scrape the fat, lean, and bones of the beef until clean.

  2. If any soil remains on the bones, saw it off with a beef saw.

Roast

  1. Spit the beef and place it in a roasting pan with ½ pint of water.

  2. Start cooking it away from the fire, gradually moving it closer.

  3. Turn and baste the beef every few minutes.

  4. Cook slowly for about two hours.

  5. When nearly done, season with black pepper, cayenne pepper, and salt.

Make the gravy and serve

  1. Pour off the grease for gravy, add a little water, pepper, and salt.

  2. Serve the gravy in a gravy boat and garnish with grated horseradish.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Is the main cut being cooked, so its fat and lean meat set the flavour and juiciness.
Water
Added to the roasting pan to create moisture and steam around the beef during slow cooking.

The step that matters

Cook slowly for about two hours. Gentle, gradual heat cooks the beef evenly and keeps it tender, while frequent basting keeps the surface from drying out.

Swap the horseradish

How well each one fits the dish's main ingredients (beef, pepper):

  1. Capsicumfits better
  2. Tomatofits better
  3. Carrotfits better
  4. Horseradishthe original

Fit is the average pairing score against beef, pepper. Candidates are from the same food group and used in at least 100 recipes.
