To Make Polenta

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Stew the cold chicken or meat until done, then cut it into pieces.

  2. Mash the potatoes and spread them around the sides and bottom of a baking dish, about ½ inch thick.

  3. Add the stewed meat along with its cooking liquid to the dish.

  4. Season with pepper and coarse sea salt.

  5. Boil the macaroni, then spread it on top of the dish.

  6. Top with grated cheese, butter, pepper, and salt.

  7. Bake at 350°F (175°C) until heated through and golden.

  8. Serve in the baking dish.
