Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chickens
Provides the main protein and body of the salad.
Eggs
Mashed into the dressing, adding richness and body to the emulsified sauce.
Oil
Forms the emulsified dressing with the eggs, giving the salad its richness and moisture.
Celery
Adds crisp texture; soaking in cold water helps it stay crisp.
Mustard
Helps stabilise the emulsion of the oil-based dressing and adds sharp flavour.

The step that matters

Slowly add the oil while constantly stirring. Adding oil slowly while stirring lets it disperse into tiny droplets held by the mustard and egg, forming a stable emulsion. Adding it too fast can cause the dressing to split and turn greasy.

Swap the celery

How well each one fits the dish's main ingredients (chicken, egg, mustard, pepper, vinegar):

  1. Tarragonfits better
  2. Dillfits better
  3. Capersfits about as well
  4. Celerythe original

Fit is the average pairing score against chicken, egg, mustard, pepper, vinegar. Candidates are from the same food group and used in at least 100 recipes.
