Why it works: Almond and flour are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 8,673 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Almond Cake

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Blanch the almonds.

  2. Rub them finely in a mortar with a little rose water.

Make the batter

  1. Beat the egg whites until very light.

  2. In a separate bowl, beat the sugar with the egg yolks.

  3. Combine the almond mixture with the egg whites and flour.

  4. Pour the batter into small tins and bake for 1.5 hours at 350°F (175°C).

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites lighten the batter and help it rise, while yolks add richness.
Almonds
Ground almonds provide the body and moist, tender crumb of the cake.
Flour
Gives the cake structure so it holds its shape as the batter sets.
Sugar
Sweetens the cake and helps the yolks become smooth and pale when beaten.

The step that matters

Beat the egg whites until very light. Whites must be beaten to a light foam that traps air. This air expands in the oven and lifts the batter, so under-beaten or deflated whites leave a dense cake.
