To Pickle Tomatoes

Ingredients

Directions

  1. Layer ripe tomatoes in a jar, sprinkling coarse sea salt over each layer.

  2. The next day, remove tomatoes, wipe them off, and wash the jar thoroughly.

  3. Dry the jar completely and return the tomatoes in the same manner, letting them stand for another day.

  4. Drain and wipe the tomatoes, then place them in a clean jar with mustard seed, cloves, whole black peppercorns, and sliced onions if desired.

  5. Pour cold vinegar over the tomatoes and seal the jar for storage.
