What each ingredient does

Calf's head
Provides the meat and gelatinous body of the soup as it simmers.
Eggs
Hard-boiled yolks and whites are mashed and fried, giving the garnish body and a light browned crust.
Flour
Smoothed into water and stirred into the soup, it thickens the broth slightly.
Claret wine
Cooked with butter and sugar, it adds acidity and fruity depth to the flavor base.
Madeira wine
Added to the chopped brains and eggs, it contributes sweetness and rich aroma.
White sugar
Cooked with butter and claret, it balances acidity and promotes gentle browning.

The step that matters

Fry the egg mixture until light brown. Frying the mashed eggs with flour needs gentle heat and attention. Too little browning leaves them pale and bland, while too much scorches the proteins and sugars, giving a bitter taste.
