To Make a Veal Pot-pie

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Half boil the veal and cut it into small pieces.

  2. Season the veal with cayenne pepper, coarse sea salt, nutmeg, parsley, and a little butter.

  3. Make a pie crust and line the sides of a deep dish with it.

  4. Place the seasoned meat in the dish and add some cream.

  5. Place a small cup in the middle of the pie.

  6. Cut across the center of the pie and turn back the sides to let the steam escape.

  7. Bake at 300°F (150°C) until cooked through.
