Why it works: Clove and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 17,451 recipes. Both carry ethyl octanoate, which smells fruity, wine. The science ↓

Potted Shad

Oven, in the book's wordsA moderately warm oven

Ingredients

Directions

The book says “a moderately warm oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

  1. Thoroughly clean and wash the shad, then split them in two and cut into square pieces.

  2. Place a layer of fish in a stone crock, sprinkling with salt, cloves, whole pepper, and mace.

  3. Continue layering until the crock is filled.

  4. Pour pure cider vinegar over the fish until covered.

  5. Cover the mouth of the crock with a bladder, tying it down tightly to prevent steam from escaping.

  6. Place the crock in a 350°F (175°C) oven and bake for several hours.
