What each ingredient does

Rice flour
Starch thickens the water as it cooks, giving the porridge its body.
Sugar
Adds sweetness to balance the plain, starchy base.

The step that matters

Mixing the rice flour into a paste before adding it to the water. Dry flour added straight to hot liquid clumps as its outer layer hydrates before the inside does. A smooth paste disperses evenly, so the starch thickens the porridge without lumps.

Swap the nutmeg

How well each one fits the dish's main ingredients (rice, flour, sugar, cream):

  1. Cinnamonfits about as well
  2. Nutmegthe original
  3. Turmericfits about as well
  4. Jalapenofits less well

Fit is the average pairing score against rice, flour, sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
