Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix bread crumbs, butter, thyme or summer savory, pepper, and salt thoroughly.

  3. Rub the turkey inside and out with salt and pepper.

Stuff and roast

  1. Fill the turkey with a spoonful of crumbs, then add a few oysters.

  2. Strain the oyster liquor and use it to baste the turkey.

  3. Cook the turkey for at least three hours in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Turkey
Forms the main body of the dish, cooked through in the oven.
Bread crumbs
Absorb butter and seasoning to make a moist, flavourful stuffing.
Butter
Adds fat and richness, carrying flavour through the crumbs and keeping them moist.
Oysters
Add briny, savoury flavour to the stuffing and their liquor adds flavour when basting.

The step that matters

Cook the turkey for at least three hours in the oven.. A stuffed bird is dense, so the centre takes longer to reach a safe temperature than the outside. Checking the thickest part, and the stuffing, with a thermometer prevents undercooking.

Swap the thyme

How well each one fits the dish's main ingredients (turkey, bread, butter, pepper, oyster):

  1. Sagefits about as well
