Directions

Prepare the must

  1. Pick the grapes and mash them without breaking the seeds.

  2. Cover with a woolen cloth and let stand for 7 to 10 days, stirring daily until fermentation begins.

Add sweetener and finish

  1. Strain the mixture and add 1 quart of water and 3 pounds of sugar to the 4 quarts of juice.

  2. In November, add the beaten whites of 24 eggs to about 30 gallons of wine.

  3. Bottle the wine before the March winds.

What each ingredient does

Grapes
Provide the juice, sugar source and flavor that ferment into the wine.
Sugar
Feeds the yeast during fermentation, producing alcohol and adding sweetness.
Egg whites
Clarify the wine by binding particles that settle out, leaving it clearer.

The step that matters

Stirring daily until fermentation begins. Stirring keeps the pulp and skins in contact with air and yeast so fermentation starts evenly. Fermentation is the step that turns sugar into alcohol, so a stalled start delays the whole batch.

Swap the grape

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Grapethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
