Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Thicken the hot broth lightly as the yolks cook gently, adding body and richness.
Boiled rice
Adds soft starchy body and bulk to the soup.
Beef extract
Gives the broth a concentrated, savory meat flavor.
Grated onion
Adds aromatic sweetness and savory depth to the broth.

The step that matters

Pour the hot liquid into the beaten eggs. If the broth is poured in too fast or is too hot while the eggs are whisked, the yolks can scramble in lumps rather than blending smoothly. Adding the hot liquid gradually while stirring gently tempers the eggs so the soup stays smooth.

Flavor stand-ins for the onion

How well each one fits the dish's main ingredients (beef, celery, pepper, egg, rice):

  1. Carrotbetter flavor fit
  2. Capsicumbetter flavor fit
  3. Tomatobetter flavor fit
  4. Onionthe original

Fit is the average pairing score against beef, celery, pepper, egg, rice. Candidates are from the same food group and used in at least 100 recipes. This compares flavor only: it does not check the job the ingredient does in the dish (bulk, moisture, acidity, structure).
