Why it works: Beef and pepper are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 18,971 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Pot Roast

Ingredients

Directions

Braise

  1. Select a 4-pound piece of beef with suet.

  2. Place the beef in a kettle and cover with boiling water.

  3. Remove scum as it rises to a boil.

  4. Boil rapidly for 3 minutes to harden the outer fiber.

  5. Reduce heat and simmer for 3½ hours.

  6. When water evaporates, leaving only fat, season with salt and pepper.

  7. Cook in the fat for 30 minutes, turning often to brown on all sides.

Make the gravy

  1. Remove the meat to a hot platter.

  2. Add ¼ cup flour to the fat and blend well.

  3. Stir in 1 pint of boiling water constantly to make gravy.

  4. Season the gravy, strain, and serve.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef shoulder, rump, or round
Long simmering breaks down connective tissue, leaving the meat tender and moist.
Suet
Its rendered fat browns the meat's surface and carries flavour through the braise.
Flour
Cooked into the fat, it thickens the liquid into a smooth gravy.

The step that matters

Cook in the fat until the water has fully evaporated. Simmering until only fat remains lets the meat fry and brown directly. If water is still present, the surface stays grey and steamed instead of developing a deep, flavourful crust.
