Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and help it set firm when baked.
Pulverized crackers
Absorb liquid and give the loaf body and a tender texture.
Lean veal
Provides the main meat structure and mild flavor of the loaf.
Lean fresh pork
Adds fat and moisture, keeping the meat from drying out as it bakes.

The step that matters

Moisten the mixture with the stock. Adding stock from cooking the meat restores moisture lost in cooking and chopping. Too little liquid leaves the loaf dry and crumbly, while the eggs and crackers then set it firmly as it bakes.

Swap the allspice

How well each one fits the dish's main ingredients (veal, pork, egg, pepper):

  1. Sagefits better
