Creamed Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the chicken

  1. Boil the chicken and shred it as for salad.

Make the sauce

  1. In a pan, blend the butter and flour until smooth.

  2. Heat the cream in a separate pot until hot.

  3. Gradually add the hot cream to the butter and flour mixture, stirring until thickened.

  4. Season the sauce with salt and pepper to taste.

Bake and serve

  1. Combine the sauce with the chicken and mushrooms.

  2. Transfer the mixture to a baking dish, cover with bread crumbs and bits of butter.

  3. Bake at 350°F (175°C) for 30 minutes.

  4. Serve in timbales with a teaspoon of whipped cream on top.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body and protein of the dish, shredded so it blends into the sauce.
Butter
Forms the fat base of the roux, adding richness and flavour to the sauce.
Flour
Thickens the cream into a smooth sauce when cooked with the butter.
Cream
Makes the sauce rich and smooth, giving it body and a soft texture.
Mushrooms
Add earthy flavour and a tender bite to the filling.

The step that matters

Gradually add the hot cream to the butter and flour mixture, stirring until thickened.. Adding the hot cream slowly while stirring keeps the flour evenly dispersed, so the sauce thickens smoothly without lumps.
