Roast Wild Duck

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 400°F (200°C).

  2. Place the duck on a rack in a dripping pan.

  3. Sprinkle the duck with coarse sea salt and black pepper.

  4. Cover the breast of the duck with the slices of fat salt pork.

  5. Bake for 20 to 30 minutes, basting with the fat in the pan.

  6. Stuff the duck with the apple pieces and chopped onions for flavor.

  7. For an edible stuffing, soak dry bread in boiling water until absorbed, then press out the water.

  8. Season the bread with salt, pepper, melted butter, and finely chopped onion.
