Why it works: Lemon and pepper match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 27,047 recipes. Both carry trans-2-nonenal, which smells cardboard, fatty. The science ↓

Roast Turkey with Oyster Stuffing

Ingredients

Directions

Prepare

  1. Thoroughly clean and dry the turkey.

  2. Crumble the loaf of stale baker's bread until very fine and season with pepper and salt.

  3. Drain the oysters, reserving the liquor.

  4. Peel the lemon, avoiding the bitter white skin, and cut the peel into small bits.

  5. Chop the white part of the celery finely.

Make the stuffing

  1. Mix the chopped celery with butter and lemon juice.

  2. Combine the bread mixture, oysters, celery, butter, and lemon juice until well mixed.

  3. Stuff the turkey's body and crop with the mixture.

Roast and finish

  1. Bake the turkey for at least 2 hours, basting frequently with the reserved oyster liquor.

  2. Cook the chopped celery in a basin on the stove.

  3. Add the cooked celery to the gravy when made.

What each ingredient does

Turkey
Forms the main body of the dish, cooked whole around the stuffing.
Stale baker's bread
Crumbs absorb moisture and liquid, giving the stuffing its body.
Oysters
Add a briny, savory flavor to the stuffing.
Celery
Adds a crisp, mildly savory aroma and texture to the stuffing and gravy.
Butter
Adds fat for richness and helps carry flavor through the stuffing.

The step that matters

Stuffing the turkey. Stuffing packed tightly around a whole bird can slow heat reaching the center, so the stuffing may not reach a safe temperature before the meat overcooks. Keeping it loose and checking the center temperature helps.
