A Good Boiled Dinner

Ingredients

Directions

  1. Four hours before serving, place the meat in a kettle of boiling water, enough to cover it slightly.

  2. Once boiling, skim the surface carefully, then reduce heat and let it boil slowly.

  3. One hour before serving, add the cabbage and turnips.

  4. Half an hour later, add the whole potatoes.

  5. If using corned beef, no salt is needed; if using fresh meat, add salt when adding the potatoes.

Recipe from a historical cookbook (Internet Archive).

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
