Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the onions

  1. Parboil large onions in enough salted boiling water to cover for 10 minutes.

  2. Cool and remove the centers of the onions.

Make the filling

  1. Mash the centers and mix with finely chopped cold meat, stale soft bread crumbs, and enough cream or melted butter to moisten.

  2. Season the mixture with salt and pepper.

Fill and bake

  1. Fill the onion shells with the mixture.

  2. Place in a buttered shallow baking pan.

  3. Bake at 350°F (175°C) until the onions are tender.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Large onions
Hold the filling in their shells and soften into tender, sweet layers when baked.
Cold meat
Provides savory flavor and body to the stuffing.
Stale soft bread crumbs
Absorb moisture and help bind the stuffing so it holds together.
Cream or melted butter
Adds moisture and richness so the stuffing does not dry out.

The step that matters

Remove the centers without breaking the shells. The onion shells must stay intact to hold the filling. Parboiling softens the layers enough to scoop cleanly, and cooling first makes them easier to handle without tearing.

Swap the onion

How well each one fits the dish's main ingredients (meat, bread, cream, pepper):

  1. Capsicumfits better
