Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cut a slice off the top of each tomato and remove most of the inside.

  2. Fill the tomatoes with a rich dressing for chicken and replace the tops.

  3. Place the tomatoes in a pan without water.

Roast and serve

  1. Roast in a 350°F (175°C) oven for 30 minutes or until done.

  2. Sprinkle sugar over the tomatoes and serve.

What each ingredient does

Large tomatoes
Serve as the hollow shell that holds the filling while roasting.
Rich dressing (for chicken)
Adds fat and moisture so the filling stays rich as it heats.
Sugar
Adds sweetness and helps the tomato surfaces brown lightly in the oven.
