What each ingredient does

Sweetbreads
Provide the main meaty texture, which becomes tender after parboiling and cooling.
Cucumber
Adds cool crispness and moisture, contrasting with the rich sweetbreads.
Cream dressing
Adds richness and moisture, binding the salad together with a creamy coating.

The step that matters

Let the sweetbreads cool completely before dicing. Cooling firms the cooked sweetbreads so they cut into clean, even cubes instead of crumbling. Adding warm sweetbreads to the cream dressing could also thin or split the dressing.

Swap the cucumber

How well each one fits the dish's main ingredients (cream, lettuce):

  1. Beetrootfits better
  2. Spinachfits better
  3. Leekfits better
  4. Cucumberthe original

Fit is the average pairing score against cream, lettuce. Candidates are from the same food group and used in at least 100 recipes.
