Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the base

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, mix the milk, butter, bread crumbs, salt, and cheese.

  3. Beat the egg yolks until lemon colored and add to the mixture.

Bake

  1. In a separate bowl, beat the egg whites until stiff peaks form, then gently fold them into the mixture.

  2. Pour the mixture into a buttered dish and bake for 20 minutes.

What each ingredient does

Eggs
Egg yolks enrich the base, and whipped whites lighten it and help it rise and set.
Cheese
Melts into the base to give the fondue its rich, savory flavor and body.
Milk
Provides the liquid that gives the mixture a smooth, moist, custard-like texture.
Bread crumbs
Soak up the milk and help give the mixture structure and body.

The step that matters

Folding in the egg whites. Whites hold air only when beaten to stiff peaks. Folding gently keeps that air in, which lets the fondue rise in the oven; stirring hard deflates it.
